THE TEQUILA
At Casa República, we differentiate ourselves by carefully crafting our tequila through a unique blend of two final white tequila tanks. This method allows us to achieve a balanced profile that combines tradition, complexity, and smoothness. First Tank – 80% of the Final Blend
Our three expressions offer a remarkable lingering presence on the palate, characteristic of a high-quality distillate. This duration on the taste buds allows our tequila to be ideal for enjoying neat or mixed with the mixer of your choice, without losing its distinctive essence and flavor.
First Tank – 80% of the Final Blend
-
Agave Origin: A blend of 70% Valles agave and 30% Highlands agave. Cooking: Slow-cooked in autoclaves for 24 hours, followed by 24 hours of resting.
-
Extraction: Traditional milling train.
-
Fermentation: Wild fermentation in stainless steel tanks, lasting 2–3 days depending on the climate, providing fresh and herbal notes.
-
Distillation: Double distillation in stainless steel stills using a gentle distillation process. This technique maintains a lower temperature and slower pace, carefully separating alcohols to capture the purest and cleanest heart, while preserving delicate aromas and flavors.
Second Tank – 20% of the Final Blend
-
Agave Origin: A balanced mix of 50% Valles agave and 50% Highlands agave.
-
Cooking & Extraction: Same process as the first tank. Fermentation: Wild fermentation, but extended to 5–6 days, which produces more malolactic notes and deeper hints of cooked agave. Distillation: Double distillation in stainless steel stills, also with gentle distillation. In this case, we allow a small portion of heads to remain, as they hold more agave flavor and character from fermentation—without introducing harmful alcohols.
Blending and Finishing
Once we obtain both tequilas, we blend them in a proportion of 80% lighter, smooth tequila with 20% stronger, old-style tequila, resulting in a profile that is friendly to all palates yet rich in traditional tequila character. Before dilution, the tequila undergoes a micro-oxygenation process, which introduces controlled amounts of oxygen to soften the profile, harmonize the flavors, and round out the mouthfeel. Finally, the tequila is diluted with volcanic deep well water to reach 40% Alc. by Vol., and is then bottled—ready to share the essence of Casa República.
